3-½ cups sifted flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon grated nutmeg
¼ teaspoon ground mace
½ teaspoon salt
4 egg yolks
1 cup sugar
2 tablespoons butter, softened
¾ cup buttermilk
1 teaspoon rum extract
Oil for deep frying
CINNAMON-SUGAR COATING
½ teaspoon ground cinnamon
1 cup sugar
Recipe
Sift together the flour, baking powder, baking soda, cinnamon, cloves, nutmeg, mace and salt.
Beat together the egg yolks and sugar until light. Add the butter, buttermilk and rum extract. Add the sifted dry ingredients all at once, stirring just until smooth. (The dough is very soft.) Knead the dough lightly on a floured surface. Cover, and refrigerate for at least 1 hour.
Roll out the dough 3/8-inch thick on a floured surface. Cut out doughnuts with a floured doughnut cutter.
In oil heated to 375 degrees, fry a few doughnuts at a time until golden brown, turning once. Drain the doughnuts on paper towels. Roll them in the cinnamon-sugar coating.
