    10 lb tomatoes (pref. overripe)
    1 1/4 c wine vinegar
    2 tb salt
    1 ts cinnamon
    1 tb allspice
    1 tb mustard powder
    1 ts cayenne pepper
    1 tb baking powder
    1/2 c dark brown sugar

    Recipe



    PLACE TOMATOES AND VINEGAR in a large saucepan over medium heat.
    Cover and cook until soft, about 30 minutes. Strain the tomatoes or
    place through a food mill. Discard seeds and skins and replace tomato
    pulp in a clean saucepan. Add all other ingredients and let simmer
    over medium heat about 2 hours, or until reduced to 6 cups. Stir
    occasionally. The mixture should be thick. Makes 6 Cups
