    ¼ cup butter
    1 cup onions, finely chopped
    2 cloves garlic, crushed
    1 lbs potatoes, cut in chunks
    1 lb cabbage, coarsely shredded
    2 cups cooked beets, chopped
    ½ cup celery, coarsely chopped
    3 medium tomatoes, coarsely chopped
    1 cup parsnips, coarsely chopped
    ½ tsp sugar
    ¼ cup red wine vinegar
    1 tbsp salt
    2 quarts beef stock
    1 ½ lbs cooked beef or veal
    1 pint sour cream
    2/3 tbsp dill, finely chopped

    In large pot, melt butter. Add onion, garlic and cook 6 to 8 minutes stirring until onions are soft and lightly colored. Stir in vegetables, sugar, vinegar, salt and stock. Bring to boil. Lower heat and simmer, partially covered, for 30 minutes until potatoes are soft. Add meat and simmer, partially covered, for 10 to 15 minutes. Add seasonings and serve with sour cream.
