    Banana Nut Bread French Toast

    The Bread:

    2 large bananas
    2 C. flour
    1 t. baking soda
    1 t. baking powder
    1 C. sugar
    1/2 C. oil
    2 eggs
    1 oz. milk
    1 t. vanilla
    1 C. nuts (pecans, walnuts, etc)

    French Toast Batter

    6 eggs
    1 C. half and half
    1/4 t. cinnamon
    1 t. vanilla
    pinch salt

    Recipe



    Mash bananas in bowl, mix dry ingredients, except sugar, in another bowl.

    Mix in sugar, oil, eggs, to bananas. Mix well, add vanilla and milk.

    Add dry ingredients to wet ingredients, then add nuts.

    Pour into a greased, floured loaf pan (4 x 8) Bake at 350° F. until a toothpick comes out clean.


    French Toast Batter:

    Whisk above ingredients vigorously.

    Slice banana bread 1/2" thick. Dip into French toast batter and carefully place onto hot buttered griddle.

    Cook 2-3 minutes until golden brown and turn over for another 1-2 minutes.

    Serve garnished with fresh fruit or whipped cream and sprinkle with confectioner’s sugar.
