Breakfast Pita

Serves 4.
1 pita breads, cut in half
4 whole eggs
Salt and black pepper, to taste
1/2 cup potatoes, cooked and diced
2 or 3 breakfast sausages, cooked and chopped
1/2 cup Cheddar cheese, gratedRecipe
Preheat oven to 350 degrees F. Place pita bread on a baking sheet and keep warm in the oven
Heat a medium skillet over high heat. Coat with cooking spray. Add potatoes and sauté until lightly browned, about 5 minutes. Add the sausages and allow to cook through, chopping as they cook.
Reduce heat to medium and add eggs. Mix gently until eggs are firm, about a minute or two. Season with salt and pepper.
Remove pitas from oven. Stuff pita with potato, sausage and egg mixture. Sprinkle on some grated Cheddar cheese and eat while still warm.
