Patti LaBelle's voice not only soothes the soul, but recipes from her "Lite Cuisine"cookbook, satisfy the appetite.

    Ingredients
    1/4 cup margarine
    1/3 cup unsweetened cocoa powder
    1 pint (2 cups) fat-free half-and-half
1 tbsp. brown sugar substitute, such as Brown Sugar Twin
1 tbsp. packed light brown sugar
    2 eggs, beaten
    3 eggs whites
    1/2 tsp. vanilla extract
    1 tsp. chocolate-flavor extract
    1/3 cup chopped toasted pecans
1 9-inch frozen pie shell or Perfect Pie-crust (page 192)

    Recipe

    Directions
    Preheat oven to 350 F.

Melt the margarine in a medium saucepan over medium-low heat. Whisk in the cocoa powder until smooth. Gradually whisk in the half-and-half, brown sugar substitute, brown sugar, eggs, and egg whites. Remove from the heat and stir in the vanilla extract, chocolate-flavor extract, and pecans.

Place the pie crust on a baking sheet. Pour in the chocolate filling and bake until set and a toothpick inserted in the center comes out clean, 40 to 45 minutes.

    Patti's pointers
To toast the pecans, spread them on a baking sheet and bake while the oven is preheating until fragrant and toasty, about 5 minutes.
