    Provencale Roast Tomatoes

    8 Firm, Large Beefstake Roasting tomatoes(about 2 lbs.), cored and cut in half crosswise; Salt and freshly ground black pepper; 8 garlic cloves; 3/4 cup fresh seasoned bread crumbs; handful of of fresh flat-leaf parsley, finely minced; 3 tablespoons extra-virgin olive oil.

    Recipe



    1. Preheat your oven to 400 degrees F.

    2. Arrange the tomatoes, cut sides up, in a large baking dish. Season the tomatoes generously with salt and pepper. Slice the garlic into thin chips and sprinkle over the tomatoes. Combine the bread crumbs and parsley, and scatter the mixture over the tomatoes. Drizzle on the olive oil.

    3. Bake uncovered, until the tomatoes are soft, browned and sizzling, about 1 hour. Cool and serve immediately.

    YIELD: 8 Servings
