    Porcupines were always a favorite of mine and the Jiffy method is the best of the two.

    List of Ingredients




    1 lb. ground beef
    1/2 c. raw rice, washed
    1/4 c. chopped onion
    1 t. salt
    1/4 t. pepper
    2 T. Wesson, pure vegetable oil
    2 (8 oz.) cans Hunt's Tomato Sauce
    1 c. water

    Recipe



    Mix beef, rice, onion and seasonings. Form into small balls. Fry in hot Wesson, turning frequently, until light brown but not crusty on all sides.
    Add Hunts tomato sauce and water. Mix well. Cover. Simmer about 45 mins.
    4 servings.

    Jiffy Porcupines:
    To make with packaged, precooked, rice, use 2/3 c. rice (half a 5 oz. pkg.) Prepare as above. Simmer 15 to 20 mins. These will not be as porcupiney as the longer cooking recipe. But they are fluffy and moist, and taste delicious.
