Eggplant Supper Soup

Recipe Introduction
This recipe works very good in the dutch oven and is easy to make. I sometimes substitute sausage for the ground beef.
List of Ingredients
1 lb ground beef
2 (14 oz) cans beef vroth
1 (28 oz)can whole tomatoes, undrained and chopped
1 medium eggplant - peeled and diced
1 medium onion - chopped
1/2 c chopped carrot
1/2 c chopped celery
1 clove minced garlic
1/2 t salt
1/2 t pepper
1/2 t ground nutmeg
1/2 c uncooked macaroni
2 T chopped fresh parsley
Recipe
Brown ground beef in dutch oven; drain. Add remaining ingredients except macaroni and parsley; cover and simmer 30 minutes. Add macaroni and simmer an additional 12 minutes or until done. Stir in parsley.
