    Albanian Doughnuts

    2 packages active dry yeast
    1/2 cup warm water
    3/4 cup scalded milk
    3/4 cup sugar
    1 teaspoon salt
    1/3 cup butter
    2 eggs
    3-1/2 cups flour
    1 quart oil, for frying
    Cinnamon sugar or powdered sugar

    Combine yeast and warm water; let set for 5 minutes. Add to the scalded milk, sugar, salt and butter. Stir until sugar and salt are dissolved. Let set until lukewarm. Add the eggs to milk mixture; then yeast mixture and flour.
    Mix well, cover and let rise until doubled.

    Heat oil in heavy skillet or electric skillet until 350° F. Dip a tablespoon in cold water; then scoop out spoonful of dough and drop in hot oil. (Do not stir dough down). Brown on one side and then turn over. Drain on paper towels.
    Sprinkle with cinnamon-sugar or powdered sugar. Will keep in a bag for 1 week.
