    Elephant Ears I

    3 egg yolks
    1 whole egg
    6 tablespoons cold water
    1 teaspoon salt
    2 cups all-purpose flour
    Cinnamon-Sugar Mixture:
    1 tablespoon ground cinnamon
    1/2 cup sugar
    Oil for frying

    Beat eggs until very fluffy, about 8 minutes. Beat in water and salt. Stir in flour, working with hands, if necessary. Knead slightly on floured surface until not sticky, but still soft. Divide dough into 12 equal portions.

    Roll each portion out on a floured surface to approximately 8-inch circles, very thin. Heat 1-inch depth of oil to 375° in a heavy skillet. Gently place one circle of dough at a time, into hot oil, frying only about 10-15 seconds per side. Use tongs to turn and remove them. Handle carefully.

    Circles will be golden yellow and crisp; drain briefly on paper towels. Sprinkle with cinnamon sugar mixture, or can sprinkle with powdered sugar, if desired.
