    Romy's Peanut Butter Muffins

    1 cup milk
    1 egg, slightly beaten
    1/4 cup melted butter or margarine
    2 cups flour
    1 tablespoon baking powder
    1/4 teaspoon salt
    1/4 cup sugar
    1/2 cup peanut butter

    Preheat oven to 375° F. Grease 12 large muffin cups. Combine first 3 ingredients and set aside.

    Sift together dry ingredients in a bowl. Cut in peanut butter until mixture is crumbly. Add liquid mixture. Stir just until dry ingredients are moistened. Fill muffin tins 2/3 full. Bake 18-20 minutes or until golden brown. (Or fill 1/3 batter in tins; place 1/2 teaspoon strawberry jam or your favorite. Cover with enough batter to fill 2/3 full. Bake the same as above.
