    Mock Apple Pie

    4 cups zucchini, sliced (if young, unpeeled....otherwise peel them)
    1 apple, grated (optional)
    5 tablespoons lemon juice
    1/2 cup sugar
    2 tablespoons ground cinnamon
    2 tablespoons cornstarch
    2 tablespoons tapioca
    1 (10-inch) unbaked pie shell
    Topping:
    1/2 stick margarine
    1/2 cup flour
    1/2 cup sugar (white or brown)

    Mix together zucchini, apple (if using) and lemon juice; mix next 4 ingredients dry and add to zucchini. Pour into unbaked pie shell.

    Topping: Cut margarine into flour and sugar until crumbly. Sprinkle over the top of pie. Bake at 375° for about 1 hour.
