Pumpkin Squares

Pumpkin Squares
1 cup oil
2 cups sugar
2 cups canned pumpkin
4 eggs
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
Frosting:
3 ounces cream cheese, softened
1 teaspoon vanilla
1/4 stick margarine, softened
1 tablespoon milk
2 cups powdered sugar
Combine oil, sugar, canned pumpkin and eggs together in a large bowl. Add combined dry ingredients and mix well with a hand mixer. Grease a baking sheet with sides (jellyroll pan). Spread pumpkin mixture on the baking sheet, spreading until evenly distributed. Bake at 350� 20-25 minutes or until toothpick inserted comes out clean. Cool.
Frosting: Combine all ingredients and beat with mixer until fluffy and smooth. Spread on cooled pumpkin squares. Cut in squares.
Makes 3-1/2 dozen
