Sweet Surprises
3/4 cup raisins
1 cup boiling water
1 teaspoon baking soda
2 egg yolks
Mayonnaise
1 teaspoon vanilla
1 cup sugar
2 cups self-rising flour
1/4 teaspoon salt
1/4 teaspoon mace
1/2 to 1 cup finely chopped nuts
1 cup raw shredded sweet potatoes
1 teaspoon lemon juice
Cinnamon-sugar mixture
Combine raisins, boiling water and soda; mix and cool to lukewarm. Beat egg yolks in a cup. Add enough mayonnaise to the cup to fill it 3/4 full. In a bowl, add vanilla, sugar, self-rising flour, salt, mace, chopped nuts and sweet potatoes. Sprinkle with lemon juice. Stir in raisins and egg yolk mixture.
Pour in two 13x9-inch pans or three 8x8-inch pans. Sprinkle tops with cinnamon-sugar. Bake at 350� for 25 minutes. Cut into bars when cool. Can be baked in loaf pans also. Freezes well.
