    ***POLISH BREAD***

    Source of Recipe

    Mom

    List of Ingredients

    ½ lb. margarine
    1 cup sugar
    1 tbsp. salt
    3 eggs
    3 pkgs. yeast
    3 cups scalded milk*
    10 cups flour (yes I said 10!)
    2 cups light raisins

*Scalded milk is milk heated in a pot until it rises and bubble, but not burns.

**An egg wash is one egg beaten with a little water beaten in to it.

    Recipe

In saucepan, heat milk until scalded. Remove pan from heat. Melt butter in hot milk. Add sugar and salt to milk mixture.

Add eggs one at a time to cooled, but not cold mixture. Mix well. Add yeast to mixture. Add flour 1 cup at a time with dough hook or wooden spoon and later by hand. Add raisins. Knead dough and let rise in covered bowl in warm spot until doubled in size.

Divide dough into 3 parts. Save a handful of dough to make ropes the length of the loaf and then take 3 ropes and braid them. Shape dough into loaves. Place in greased loaf pans. Place braid on top of loaf. Cover with towel and put in a warm place until doubled in size.

Brush with egg wash** and sprinkle with poppyseeds. Bake in a 350 degree oven for 30 – 45 minutes. You will have to watch it. Yield: 3 loaves or 1 very large loaf.
