    I use this recipe to also make turtles, bars, and top cookies.


    List of Ingredients




    1 quart heavy cream
    1 - 32 oz bottle of white corn syrup
    4 cup sugar
    1 lb. butter


    Recipe



    CARAMELS:

    Combine ingredients in a heavy pan. Mixture will boil high so choose pan appropriately.

    Boil until mixture reaches 246 degrees. Pour into a well buttered pan.

    Cool overnight. Remove and place on cutting board. Cut and wrap caramels. Do not store in the refrigerator.


    TURTLES:

    LIGHTLY butter muffin tins. Put toasted pecans (or your choice of nut) to cover the bottom of each muffin tin. I have a whole collection of different sizes muffin tins. Put a dollop of hot caramel in the middle of the nuts. Continue until all the tins are filled. Depending on how many tins you have, you will also need a cake pan to put the remaining caramel in. Cool completely and pop out of the tin. I dip the turtles entirely in chocolate, this prevents them from sticking to each other.

    I have also made candies by dipping cookies or wafer cookies into the hot caramels; sprinkle with chopped nuts and after cooled, dip in chocolate.
