    List of Ingredients




    ½ cup butter (no substitutes), softened
    1 cup flour
    1 pkg. (3 oz.) cream cheese, softened

    Filling:
    2/3 cup coarsely chopped cashews
    1 egg
    ½ cup brown sugar
    1 tsp. vanilla extract

    Recipe



    In a mixing bowl, beat butter and cream cheese until smooth; stir in flour. Shape into 1 inch balls. Press dough onto the bottom and up the sides of un-greased miniature muffin cups. Spoon cashews into shells; set aside.

    In another mixing bowl, beat the brown sugar, egg and vanilla until combined; spoon over nuts.

    Bake in a 350 degree oven for 20 to 25 minutes or until filling is set and pastry is golden brown. Cool for 1 minute before removing from pan to wire racks. Yield: 2 dozen
