    CROCK POT BEEF FAJITAS

    List of Ingredients

    1 ½ lbs. beef flank steak or beef pot roast
    1 onion, sliced
    1 green pepper, cut into strips
    1 red pepper, cut into strips
    1 jalapeno pepper, chopped
    2 cloves garlic, minced
    1 tsp. chili powder
    1 tsp. ground coriander
    ¼ tsp. salt
    8 oz. can chopped tomatoes
    tortillas

    Topping: Sour cream, shredded cheese and salsa





    Recipe

    Cut steak into 6 portions. Combine meat, onion, peppers, garlic, chili powder, cumin, coriander and salt. Add tomatoes. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours. Remove meat and shred. Return meat to crock pot, stir. Spoon mixture into tortillas and add toppings.
