    This comes out more like a stew than a soup, but still good!

    List of Ingredients




    1 tbsp. olive oil
    1 cup chopped onion
    1 cup sliced carrot
    ½ cup chopped green pepper
    2 cloves garlic, crushed
    2 (13 ¾ oz.) cans no salt beef broth
    1 (28 oz.) can crushed tomatoes
    1 (15 oz.) can white kidney beans, rinsed and drained
    1 (15 oz) can red kidney beans, rinsed and drained
    1 ½ tsps. dried Italian seasonings
    ½ tsp. salt
    ½ tsp. pepper
    6 oz. ditalini pasta
    ½ cup fresh grated parmesan cheese

    Recipe



    Coat dutch oven with cooking spray; add oil and onion, then next 3 ingredients. Saute until tender. Add beef broth and next 7 ingredients, bring to a boil. Under low heat simmer 20 minutes. Add pasta.

    Cook 10-15 minutes or until pasta is tender. Top with parmesan. 8 Servings.
