    List of Ingredients


    • 1 Cup Flour
    • 1 tsp Baking Powder
    • 5 Tbsp Stick Margarine
    • 1/3 Granulated Sugar
    • 1 tsp Grated Lemon Peel
    • 2 Drops Yellow Food Coloring
    • 1/4 Cup Fresh Lemon Juice
    • 2 Tbsp Granulated Sugar


    Instructions


    1. Preheat oven to 350.
    2. Using a non-stick cooking spray, spray cookie sheets.
    3. In a small bowl, combine flour & baking powder.
    4. In medium bowl, cream margarine & 1/3 cup sugar with electric mixer on medium speed, untill light & fluffy.
    5. Beat in lemon peel & food coloring.
    6. Alternately beat flour mix & lemon juice until well blended.
    7. Chill for 30 minutes. Shape dough into 1-inch balls, roll in 2 Tbsp. sugar. Place 2-inches apart on prepared cookie sheets. Flatten cookie with fork in a criss-cross pattern.
    8. Bake until edges are lightly golden, about 10 minutes.
    9. Transfer to wire rack & cool completely.
