Garden Turkey Pie

- 1 Tbsp butter
- 1 Med. onion, sliced thin
- 2 Tbsp (+1 tsp) flour
- 2 Tbsp instant chicken bouillon granules
- 1/2 tsp dried thyme
- 1/4 tsp pepper
- 1 1/3 Cup milk
- 2 Cup cooked potatoes, diced
- 2 Cup cooked turkey, diced
- 3/4 Cup frozen peas, thawed
- 3/4 Cup frozen carrots, thawed
- 3/4 Cup frozen corn, thawed
- 1 tsp parsley
- 1 (9-inch) unbaked double crust pie dough
Instructions
- In large saucepan, over medium heat, melt butter and saute onions.
- In a small bowl, combine flour, bouillon, thyme and pepper. Add to onions.
- Cook, stirring often, for 1 minute. Stir in milk gradually -- then cook & stir until mixture thickens.
- Remove from heat. Stir in all vegetables, parsley, and turkey. Fill prepared unbaked pie crust.
- Cover with top crust and seal edges. Make steam vents and bake 35-45 minutes.
- Serves 8
