    Al's Bean Soup

    This recipe has been in my family for many, many years. I remember eating this when I was a little girl & I still do. My beloved father taught me how to make this. I thought I would share this with you. It is made with lima beans, but when it is finished cooking, you wouldn't believe the taste. I don't like lima beans by themselves but in this soup I can actually eat them.

    List of Ingredients

    2 pounds baby lima beans or (1 pound large lima beans)
    enough water to fill pot
    1 1/2 cups ketchup
    salt & pepper to taste
    2 large onions, chopped fine
    1/2 to 1 lb. bacon, uncooked & cut into small pieces


    Recipe

    Wash beans thoroughly before starting this. Put beans into a large pot or Dutch oven. Add water to fill pot. Add ketchup, onions, bacon, salt & pepper to taste. Cook for 2 hours on high, then 1 hour on low. Check after 2 hours for sticking & if more water is need.

    NOTE: What I do for adding more water is taste to see if more ketchup, salt & pepper is need. By adding more water it will get bland, so add those ingredients little by little & taste as you go.
