    Al's Stuffing for Turkey

I am posting this recipe to honor my father who passed away in 1994. He taught me how to make this when I was a young girl. This is another recipe my beloved father made at every Thanksgiving dinner. As a child, every year I always helped my father make this since he had to feed a huge family. When I was little, I think I just liked being able to "mix" it with my hands.

    List of Ingredients

1 1/2 loaves bread, toasted & broken into small or medium pieces
    1 stick butter
    4 stalks celery, chopped
    2 medium onions, chopped
    1 green pepper, chopped
    3 eggs
    3 cups water
    2 to 4 teaspoons poultry seasoning (I use 3)
2 teaspoons salt (or you can use 1)
1 pound bulk sausage (regular or mild, NO hot)OPTIONAL

    Recipe

First you have to lightly toast all the bread & then break into small or medium pieces. Put into a large pot; set aside. Chop celery, onions, green pepper. Melt butter in a large skillet then add vegetables, cook for 25 minutes or till tender. While vegetables are cooking, you can cook sausage (if using) in another skillet. Drain grease. When vegetables & sausage are done, add to bread along with eggs, water, poultry seasoning & salt. Carefully mix this thoroughly either with a large sturdy spoon or by hand. Please be careful as this is really hot & may burn your hands. If this is too dry, add just enough water to suit you. Stuff your turkey & bake as you would your turkey.

Note: If you don't want to stuff the turkey, you can put this into a casserole to fit & bake at 350° for 1 hour or till done.

This recipe can be doubled if needed.
