    This recipe can be easily doubled for 2 loaves and it is so good - I highly recommend it! But FYI, make sure you use the same type of loaf pan. A dark, nonstick one will need to be cooked at a lower temp than a light colored one.

    List of Ingredients




    1/2 cup shortening
    3/4 cup white sugar
    2 eggs
    1 cup lightly mashed ripe bananas (they are better when the skin of the banana has a lot of black specks. The riper the banana, the better the banana bread, but not to the point that it is almost rotten!!)
    1 tsp vanilla extract
    1 1/2 cups all-purpose flour
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 cup instant oats
    1/2 cup coarsely chopped, lightly toasted walnuts or pecans (your preferance)

    Recipe



    Preheat oven to 350º.

    Combine flour, soda and salt in mixing bowl. Set aside.

    Cream shortening and sugar until smooth.

    Add in eggs, one at a time, until well combined, about 20 seconds each.

    Add vanilla, bananas and flour mixture. Mix just until combined.

    FOLD in nuts and oats.

    Pour into prepared loaf pan. Smooth top with back of metal spoon.

    Bake for 50-55 minutes or until top is lightly golden brown and it tests done.

    OPTIONAL: Sprinkle about 1 Tablespoon of the oats and/or nuts on top before baking for a pretty presentation.
