    This cake is awesome and great with coffee!

    List of Ingredients




    1 cup finely chopped pecans, divided
    2 cups sugar
    1 cup vegetable oil
    1/4 cup honey
    3 large eggs
    3 cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    1 teaspoon vanilla extract
    3 cups peeled and diced Golden Delicious Apples (about 3 large apples)
    Honey Sauce (recipe below)

    Grease and flour 1 (10 cup) Bundt pan; sprinkle bottom of pan with 1/4 cup pecans. Set aside.

    Beat sugar, oil and honey at medium speed with an electric mixer until well blended. Add eggs, 1 at a time, beating just until blended.

    Combine flour, baking soda, salt, cinnamon, and nutmeg. Gradually add to sugar mixture, beating at low speed just until blended. Stir in vanilla, remaining 3/4 cup pecans, and apples. Spoon into prepared pan.

    Bake at 350 degrees for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on wire rack 15 minutes; remove from pan. Pour 1/2 cup Honey Sauce over warm cake. Cool. Serve with remaining warm sauce and if desired, ice cream.

    Honey Sauce

    1 cup firmly packed light brown sugar
    1/2 cup butter or margarine
    1/3 cup milk
    1/4 cup honey

    Bring all ingredients to a boil in a medium saucepan over med-hight heat, stirring constantly; boil, stirring constantly, 2 min. Keep warm.

    Cyndi's note: This will make 1-1/2 cups of sauce. You will only use approx. 1/2 cup for the glaze. If you are not going to serve this with the individual slices, you might want to cut the recipe down some.
