    This is a very easy dish to make and oh so good. Substitute 2 regular-size cans of whole potatoes instead of dicing potatoes if desired.

    Add a green salad and the Bacon-Topped French Bread for a complete meal.

    List of Ingredients




    2 to 2 1/2 cups cubed chicken
    1 garlic clove, finely diced or equivalent
    1 medium onion, sliced in rings
    5 potatoes, diced
    1 cup of frozen carrots, thawed
    1 pint heavy whipping cream
    1/2 to 1 cup water
    1 stick (1/2 cup) butter
    Parsley, salt and pepper to taste.

    Recipe



    Melt butter in large skillet (I use my stock pot). Add garlic and onions. Add chicken and cook until chicken is no longer pink and onions are tender. Do not drain! Add carrots, potatoes, whipping cream, water (just enough to barely cover the potatoes) and seasonings. Let simmer for about 20 min. (The longer it simmers - the better it is!! But don't let all the juice cook out!
