    Prepare this great gourmet meal right from your own kitchen!

    I have used one large pork tenderloin instead of 2 smaller ones. You may have to adjust cooking time, just make sure it is the correct temp internally.

    List of Ingredients




    1 lb sweet potatoes, peeled and cubed
    1 large onion, cut into wedges
    1/2 cup Catalina or French dressing (can use reduced fat)
    1 1/2 tsp dried thyme leaved, divided
    1 (16 oz) pkg Chicken stuffing mix
    1 1/2 cups water
    2 small pork tenderloins

    Recipe



    Preheat oven to 375º. Toss potatoes and onion in dressing and 1/2 tsp of thyme. Arrange in 10 x 15 casserole dish sprayed with cooking spray. Bake 10 min.

    Meanwhile, combine stuffing mix with water. Cut each tenderloin diagonally into thirds. Push veggies to edge of dish. Spoon stuffing down center of pan; top with pork. Sprinkle remaining thyme over meat; salt and pepper to taste, optional.

    Bake 45 - 50 min or until pork/veggies are done and meat is cooked throughly - 160º.

    Yield 6 servings.
