    Black-Eye Pea Soup

    I know, you're probably thinking, yuck! But, it actually is delicious! Even my son, who doesn't eat ANYTHING, loved it! Try it before you say you don't like it!

    List of Ingredients

    4 bacon strips, diced
    1 med. green pepper, chopped
    1 small onion, chopped
    2 garlic cloves, minced
    2 cans (15 1/2 oz each) black-eyed peas, undrained
    2 cans (14 1/2oz each) diced tomatoes, undrained
    1-1/2 tsp salt
    1 to 1 1/4 tsp ground cumin
    1 to 1 1/4 tsp ground mustard
    1 tsp chili powder
    1/2 tsp curry powder
    1/2 tsp pepper
    1/2 tsp sugar, optional
    Shredded cheese, optional

    Recipe

    In a large saucepan, cook bacon until crisp; remove to paper towels to drain. Reserve 1 tablespoon drippings in the pan. Saute the onion, green pepper, and garlic until tender.
    Add peas, tomatoes, and seasonings. Bring to a boil. Reduce heat; cover and simmer 15-20 min. Sprinkle with bacon, (cheese and parsley - opt.).
    Yield: 8 servings (2 quarts).
