    Quick and Easy Potato Soup

    Try the Bacon-Topped French Bread in the Bread section with this soup.

    List of Ingredients




    4 slices of bacon, diced
    6-7 potatoes, diced
    1 small onion, chopped
    1 stick (1/2 cup) butter or margarine
    2 cans cream of chicken condensed soup
    2 to 2 1/2 soup cans of milk
    1 - 16 oz refrigerated French Onion dip
    8 oz cheddar cheese
    Salt & Pepper to taste

    In large pan, cook bacon until crisp. Remove with slotted spoon, reserving 1 TBSP of bacon grease in pan. Add butter and let melt. Add chopped potatoes and onions. Salt & pepper to taste. Cook until done and potatoes are browned a bit (they are better that way!)

    Add soup, milk (start with 2 cans and add more if necessary to make the consistency you like) and dip; let cook until dip is incorporated. Add 1/2 the cheese, stir until melted. Top with additional cheese and reserved bacon.
