CHICKEN AMARETTO

- 2 POUNDED CHICKEN BREAST
- 3 EGGS
- FLOUR
- 3 CUP CRUSHED PECANS AND ALMONDS
- 1 TBP OIL
- 2 CUP AMARETTO
- 2 TBP WHOLE BUTTER
- 1 TBP BROWN SUGAR
Instructions
- WHIP EGGS IN TO A EGG WASH. DREDGE CHICKEN IN FLOUR. THEN EGG WASH. THEN IN PECANS AND ALMONDS.
- SAUTE IN HOT OIL. BROWN EACH SIDE.
- ADD AMARETTO. FLOMBE RIGHT IN THE CHICKEN. REDUCE BY 1/4
- ADD BUTTER AND BROWN SUGAR. DISSOLVE BUTTER UNTIL THE MIXTURE IS SAUCY. REMOVE AND SERVE.
