    List of Ingredients


    • 4 LB CHICKEN
    • 1 1/2 LB SLICED MUSHROOM OR BUTTONS
    • 3 TBP GARLIC
    • 1 1/2 SLICED WHITE ONION
    • 9 TBP OIL
    • 1 1/2 TBP BUTTER
    • 3/4 CUP SHERRY
    • 3/8 TBP BASIL
    • 3/4 TBP TARRAGON
    • 1/4 CUP CHICKEN STOCK
    • SALT
    • PEPPER


    Instructions


    1. PREPARE CHICKEN INTO 6 SERVIN PIECES. PAT DRY. SEASON WITH SALT AND PEPPER
    2. IN A SKILLET HEAT BUTTER,GARLIC AND 2/3 OIL. BROWN CHICKEN ON BOTH SIDES. LOWER HEAT AND CONTINUE COOKING. IN SEPERATE SKILLET HEAT REST OF OIL. SAUTE ONION UNTIL CLEAR. ADD MUSHROOMS AND CHICKEN STOCK. STIR IN HERBS. SIMMER FOR 10 MINUTES
    3. ADD MUSHROOMS TO CHICKEN AND SIMMER. ADD SHERRY WHILE SIMMERING AND BRING TO A BOIL. AND SERVE
