WILD RICE AND MUSHROOM SOUP
List of Ingredients
- 3 CUP SLICED MUSHROOMS
- 3 TBP SHERRY
- 1 GALLON CHICKEN STOCK
- 2 CUP WILD RICE
- 3 CUP GREEN ONION
- 3 CUP HEAVY CREAM
- 6 TBP FLOUR
- 1 TBP THYME
- 3/4 TBP WHITE PEPPER
Instructions
- SAUTE MUSHROOMS IN SHERRY ON LOW HEAT UNTIL TENDER.
- ADD CHICKEN STOCK,RICE AND GREEN ONIONS. BRING TO A BOIL.
- WHILE BRINGING STOCK TO BOIL, MIX CREAM,FLOUR AND SEASONINGS TOGETHER TO FORM A ROUX.
- ADD ROUX TO BOILING STOCK. KEEP STIRRING UNTIL SOUP THICKENS TO DESIRED FORM.
- SERVE AND GARNISH WITH CHEDDAR CHEESE
