    • 2 TBP OIL
    • 1/4 CUP BUTTER
    • 1 POUND VEAL SCALLOPINE OR THIN SLICED VEAL
    • 3/4 CUP FLOUR
    • 1 TBP LEMON JUICE
    • 1 TSP CAPERS
    • 2 TBP PARSLEY
    • SALT
    • PEPPER
    • LEMON SLICES


    Instructions


    1. HEAT OIL AND HALF BUTTER IN SKILLET. DREDGE VEAL IN FLOUR AND BROWN BOTH SIDES IN HOT SKILLET
    2. TRANSFER TO WARM PLATTER AND SEASON. REMOVE SKILLET FROM HEAT ADD REST OF INGREDIENTS TO FORM A SAUCE.
    3. BRIEFLY WARM SAUCE OVER LOW HEAT. POUR SAUCE OVER VEAL. TOP WITH LEMON SLICES AND SERVE
