- 2 TBP OIL
- 1/4 CUP BUTTER
- 1 POUND VEAL SCALLOPINE OR THIN SLICED VEAL
- 3/4 CUP FLOUR
- 1 TBP LEMON JUICE
- 1 TSP CAPERS
- 2 TBP PARSLEY
- SALT
- PEPPER
- LEMON SLICES
Instructions
- HEAT OIL AND HALF BUTTER IN SKILLET. DREDGE VEAL IN FLOUR AND BROWN BOTH SIDES IN HOT SKILLET
- TRANSFER TO WARM PLATTER AND SEASON. REMOVE SKILLET FROM HEAT ADD REST OF INGREDIENTS TO FORM A SAUCE.
- BRIEFLY WARM SAUCE OVER LOW HEAT. POUR SAUCE OVER VEAL. TOP WITH LEMON SLICES AND SERVE
