    • 1 POUNDED VEAL SCALLOPINE OR CUTLET
    • FLOUR
    • OIL
    • 1 CUP SLICED MUSHROOMS
    • 1 CUP DICED TOMATOES
    • 1/4 SLICED WHITE ONION
    • 3 ARTICHOKE HEARTS CUT IN HALF
    • KALAMATA OR BLACK OLIVES
    • 1/4 CUP WHITE WINE
    • SALT
    • PEPPER


    Instructions


    1. DREDGE VEAL IN FLOUR. SAUTE IN HOT OIL. FLIP WHEN ONE SIDE IS BROWN.

    2. ADD REST OF INGREDIENTS AND SAUTE UNTIL VEGETABLE ARE TENDER. SEASON AND SERVE.
