- OIL
- 1/2 CUP DICED SHALLOTS
- 1/2 DICED PROSCIUTTO
- 1 CUP SLICED PORTABELLO MUSHROOMS
- 1/2 CUP MARSALA
- 1/2 DEMI- GLACE
- 1 TBP WHOLE BUTTER
- FRESH PARSLEY
- FRESH MOZZERALLA
Instructions
- SAUTE SHALLOTS AND MUSHROOMS IN OIL. ADD PROSCIUTTO. COOK FOR 2 MINUTES AND FLOMBE WITH MARSALA.
- STIR IN DEMI-GLACE AND BUTTER. REDUCE BY 1/4. REMOVE FROM HEAT.
- GRILLED FILET TO DESIRED TEMP. PLACE FILET ON PLATE TOP WITH SAUCE AND GARNISH WITH FRESH PARSLEY.
- SERVE WITH YOUR FAVORITE SIDE.
