    • OIL
    • 1/2 CUP DICED SHALLOTS
    • 1/2 DICED PROSCIUTTO
    • 1 CUP SLICED PORTABELLO MUSHROOMS
    • 1/2 CUP MARSALA
    • 1/2 DEMI- GLACE
    • 1 TBP WHOLE BUTTER
    • FRESH PARSLEY
    • FRESH MOZZERALLA


    Instructions


    1. SAUTE SHALLOTS AND MUSHROOMS IN OIL. ADD PROSCIUTTO. COOK FOR 2 MINUTES AND FLOMBE WITH MARSALA.
    2. STIR IN DEMI-GLACE AND BUTTER. REDUCE BY 1/4. REMOVE FROM HEAT.
    3. GRILLED FILET TO DESIRED TEMP. PLACE FILET ON PLATE TOP WITH SAUCE AND GARNISH WITH FRESH PARSLEY.
    4. SERVE WITH YOUR FAVORITE SIDE.
