    I found this again sitting in the doctor's office. We all know it now days and this was such a good tip for left overs.


    List of Ingredients


    • Left over rice about 2 cups
    • 1 cup frozen Peas
    • 1 1/2 Diced Ham, chicken or pork ( Left over or fresh)
    • 1 teaspoon Soy Sauce
    • 2 Teaspoon Oil
    • 2 Eggs
    • 1/2 Cup Scallions
    • 1 Teaspoon Vinegar


    Instructions


    1. Large skillet add your oil left over rice on medium and add frozen peas.
    2. Stir-fry 2 minutes
    3. Add 1/2 cups leftover ham, chicken or pork and cook for 2 minutes to heat.
    4. Add 2 beaten eggs and stir fry 1 minute.
    5. Stir in 1/2 cup sliced scallions and 1 tablespoon each seasoned rice vinegar and soy sauce.


    Final Comments


    This makes for a quick meal and a pretty ggod one a well. Don't get rid of your left over's.
