    Recipe Introduction


    This is my original recipe. It is the most requested of my entire family. I formulated it after tasting many other kolacky. Don't skimp on the ingredients, as it comprimises the end product. People say they love the cookie part so much, that they wouldn't even miss the filling!


    List of Ingredients


    • 1lb. butter (just above room temperature)
    • 8 heaping Tbsp. powdered sugar
    • 1tsp. pure vanilla extract
    • 2 Tbsp. Non-dairy creamer (milk should substitute fine)
    • 4 C. All Purpose flour (do not sift)
    • Plenty of extra powdered sugar for dusting


    Instructions


    1. Add sugar to softened butter and mix with a hand mixer until smooth. Add vanilla and creamer (or milk) and mix again.
    2. Gradually add flour, 1 cup at a time, beating with hand mixer after 1st 3 additions. Do not beat in 4th cup, do this by hand.
    3. Form balls about the size of a walnut. Make an indentation in the cookie about 1/2 way down to make room for the filling.
    4. Fill with desired canned pastry fruit filling found in the baking section of your store (strawberry, apricot, poppy,prune or plum)about 1/2 tsp. should be fine, as it expands.
    5. Bake in a 350 degree oven for about 20 mins. or until sides & bottoms are lightly brown.
    6. Cool & dust liberally with Powdered Sugar.


    Final Comments


    Careful if you bring these to a party...you just might be asked to bring them all the time!
