    Homestyle Chicken Gumbo

    Sorry, I don't "do" okra! But if you would like to add that, combine it to the pot when you add the carrots and proceed at your own risk - I find them slimy, stringy and tasteless, but that's just me!

    1/2 cup Oil
    1 cup Onions, diced
    1 cups Green pepper, chopped
    1 cup carrots, diced
    4 c Chicken stock
    1 Tbs Cayenne pepper
    1 lb boneless ckicken breasts, cut into 1" cubes
    1/2 cup Flour
    1 cup Celery, chopped
    1 tsp Garlic powder
    Salt and pepper to taste
    1/2 cup Green onion, chopped

    Season and brown chicken in oil (lard, bacon drippings) over medium-high heat amd remove from pot.

    Make roux with equal parts of oil and flour over medium heat to a tan color - be careful not to scorch, or it will taste awful! Add onions, celery, carrots, green pepper, and garlic powder to roux, and stir continuously until vegetables reach desired tenderness.

    Return chicken and sausage to pot and cook with vegetables,
    continuing to stir frequently. Gradually stir in liquid and bring to boil. Reduce to simmer and cook for an additional 1 1/2 hours. Season with salt and pepper to taste. Approximately 10 minutes before serving, add green onions.

    Serve over cooked rice.
