    Chicken Tarragon Salad

    2 cups cooked chicken, cubed
    1/2 cup mayonnaise
    1/4 tsp salt
    1/4 tsp pepper
    1 Tbs tarragon (dried - use less if using fresh)
    2 Tbs onion, diced finely

    Combine all ingredients and let flavors come together in refrigerator for at least 2 hours, but overnight is better. Add mor tarragon if desired. It gives the chicken a fresh, "sweet" flavor. Very good served on sourdough or whole wheat bread.
