    Anise Cookies




    Makes 6 dozen

    1 1/4 cup soft butter
    1/2 cup sugar
    2 1/2 cups flour
    1/8 tsp salt
    2 tsp anise seed
    2 eggs

    Cream together butter and sugar. Gradually add flour and salt. The mixture will resemble fine crumbs. Work with hands until mixture turns to dough. Add anise seed and eggs and mix until well blended. Chill for about an hour.

    Roll out dough on a lightly floured board. Cut into diamond shapes with a pastry wheel. Brush with egg white and sprinkle with anise seed.

    Bake on lightly greased cookie sheet at 375 degrees for 10 minutes or until lightly browned.

    Allow to cool. After they cool, dunk the tops into a white icing mixture which, when it sets, it hardens (confectioner's sugar, milk and cream of tartar makes a good icing - slightly runny) icing). After the icing hardens, decorate the tops with flowers, candies, etc.

    Hint: Buy the tubes of icings that come with tips - green for leaves and what ever colors you like. Use the broad tip and make two leaves starting from the center of thecookie. Use the star tip to make two or three flowers on top of leaves. Very spring-like and dainty looking!
