    Syracuse Snowballs

    This recipe combines the SNOW of Syracuse (which we are still getting as of APRIL 11, may I add) and orange marmalade for our Syracuse University Orangemen - the school colors are orange and blue.

    Makes 3 dozen

    2/3 cup butter or margarine
    1/3 cup white sugar
    2 egg yolks
    1 tsp vanilla extract
    1/2 tsp salt
    1 1/2 cups all-purpose flour
    1/3 cup orange marmalade

    Preheat oven to 350 degrees F. Cream together butter or margarine and white sugar until fluffy. Add egg yolks, vanilla, and salt; beat well. Gradually add flour. Mix well then roll into 3/4-inch balls between palms of hand.

    Place cookies about 1 inch apart on greased cookie sheet. Press down slightly in center of each ball your thumb and bake for 15 to 17 minutes or until slightly golden.

    Cool slightly; remove from pan and cool on rack. Just before serving use marmalade to fill centers of cookies. Dust heavily with powdered sugar - in a few minutes it will disappear from inside the center and will only remain on the "cookie" part.
