Lemon-Dill Haddock
1/2 cup mayonnaise
2 Tbs lemon juice
1/2 tsp grated lemon peel
1 tsp fresh dill weed
1 lb fine textured haddock fillets
Mix mayonnaise, lemon juice, lemon peel, and dill. Place fish on greased rack of broiler pan and brush with half of mixture.
Broil 2 to 4 inches from heat for about 8 minutes.
Turn, brush with remaining mixture and continue broiling for 5 to 8 additional minutes or until fish flakes easily with fork.
