    Overnight Tuna Casserole

    Serves 4

    1 can (10 3/4 oz) cream of celery soup (condensed)
    1 cup milk
    1 can (6 1/2 oz) tuna*, drained
    1 cup uncooked egg noodles
    1 cup frozen peas
    1/2 cup chopped onions
    1 c coarsely chopped Cheddar cheese (separate 1/4 cup)

    Whisk soup and milk in a 2-qt microwave-safe bowl. Stir in all ingredients except for 1/4 cup cheese. Cover and refrigerate overnight.

    Cover with lid or vented plastic and microwave on high for 15-17 minutes. Sprinkle with reserved cheese and let stand, uncovered for about 10 minutes.

    *May substitute any cooked, chopped meat such as chicken or turkey. In this case, I also add about 1/2 cup dry stuffing mix and an additional 1/4 cup milk to the bowl before refrigerating.
