Poached Salmon with Mustard Dill Sauce
Serves 6
A 2 to 3-pound salmon fillet
1 Tbs soy sauce
1/2 cup prepared mustard
1/4 cup water
2 tsp sugar
1/2 cup heavy cream
1/4 cup olive oil
1 clove garlic, minced
1/2 tsp black pepper
1/2 cup chopped fresh dill
Rinse salmon and pat dry. Arrange salmon, skin side down, in a large sauce pan and rub thoroughly with soy sauce. In a separate bowl, whisk together the rest of the ingredients and pour over salmon.
Simmer over moderate heat, covered, for about 20 minutes, turning once or twice until thoroughly cooked (until it flakes easily).
Serve salmon in sauce on a bed of fresh dill or parsley and garnish with lemon slices.
