    Coconut Macaroons

    Makes about 3 dozen cookies. Store in an airtight container to keep these moist.

    1 pkg (3 1/2 oz) almond paste, cut into cubes
    1/2 cup sugar
    3 egg whites
    1 pkg (7 oz) flaked, sweetened coconut

    Heat oven to 300 degrees F. Grease cookie sheet.

    Mix almond paste, sugar, and egg whites in saucepan. Cook over medium heat for 6-8 minutes, stirring constantly, until a "path" remains when spoon is drawn through mixture. Remove from heat and stir in coconut.

    Drop mixture, by rounded teaspoonfuls, onto cookie sheet, about 1 inch apart. Bake for 25 to 30 minutes or until light brown. Cool slightly and remove from cookie sheet.
