Easy Mini-Cheesecakes
Great for bake sales and/or kid's parties...
12 vanilla wafers
2 (8-oz) pkgs cream cheese, softened
1/2 cup sugar
1 tsp vanilla
2 eggs
canned pie filling
Line muffin tin with liners and place a cookie, right-side-up in each liner.
Mix cream chees, vanilla, and sugar together on medium speed until well-blended. Add eggs, and mix well.
Pour over wafers, filling about 3/4-full. Bake at 325 degrees F for 25 minutes. Remove from pan when cool; chill. Top with canned pie filling.
