    Toad-in-the-Hole

    1 Tbs vegetable oil
    1/2 lb ground beef or pork
    4 oz flour*
    pinch of salt*
    1 egg*
    1 cup milk*

    Make small (1-inch) meatballs using the beef or turkey, following your favorite recipe. Any cooked meat will do, however. Sausage links, cut into small pieces also work.

    Put the vegetable oil in a small roasting pan and cover the bottom with the cooked meatballs. Cover and place in a 375-degree oven for about 10 minutes or until hot.

    Meanwhile, sift the flour and salt into a bowl and make a well in the center. Add the egg and half the liquid. Gradually mix the flour into the center of the bowl and add the remaining liquid. Beat until smooth.

    Pour into roasting pan and bake for about 40 minutes or until a nice toasty-warm color. Serve warm.
