    Fried Green Tomatoes

    List of Ingredients


    • 4 lrg. green tomatoes, cut 1/4 inch thick
    • 1/4 C. superfine sugar
    • 3/4 C. unbleached flour
    • 1 tsp. sea salt
    • 1/8 tsp. pepper
    • 3 T. bacon drippings
    • 6 T. oil


    Instructions


    1. Stack tomato slices on a plate sprinkling each layer with sugar. Let it rest for about 45-60 minutes.

    2. Combine all dry ingredients in a bowl. Drain tomatoes and dredge in flour mixture.

    3. Heat 1 tablespoon of the drippings and 2 tablespoons of the oil. When hot start frying the tomatoes a few at a time. Add dripping/oil mixture when needed to continue frying until all tomatoes are done. Drain on a paper towel after frying.
