    Banana Cake

    List of Ingredients

    • 1 C. unsalted, butter, softened
    • 2 3/4 C. superfine sugar
    • 3 jumbo eggs
    • 3 C. unbleached flour
    • 2 tsp. baking powder
    • 1/4 tsp. baking soda
    • 1/4 tsp. sea salt
    • 3 bananas, ripe and mashed
    • 2/3 C. buttermilk
    • 1 T. pure vanilla
    • 1 C. pecans, chopped


    1. Cream butter; gradually add sugar, beating well with an electric mixer. Add eggs, one at a time, beating well after each one.

    2. Mix mashed banana and butermilk together and set aside.

    3. Combine flour, baking powder, soda and salt; add to creamed mexture alternately with the mixture of banana, beginning and ending with the flour mixture. Mix well after each addition. Stir in vanilla and pecans.

    4. Spoon batter into 3 greased and floured 9 inch round cakepans. Bake at 325 degrees F. for approximately 30 to 45 minutes. Cake is done when a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove layers from pans and cool completely. Frost with chocolate buttercream or cream cheese frosting.
